Harvested early, between late October and early November , the still-green olives produce a fresh, vibrant, and expressive oil, marked by herbaceous and slightly peppery notes . This early harvest also gives it a high concentration of polyphenols , which are responsible for its aromatic intensity and vibrant character.

ARDENTE is ideal for enhancing simple dishes: carpaccio, grilled fish, salads, roasted vegetables or still warm bread .
